CooKing with KiM ~Vegan Tofu Stuffed Peppers

Well my intentions were good with this recipe but it just did not have the WOW factor so of course it has not been made again.  But I will share my recipe with you.

Green Peppers were the best looking thing EVER look at those colors.  YUM


Garlic sautéed for a bit before the Tofu

And there you have it.  Over all it really needed a TON more spices but for a mom who is Vegetarian/Vegan trying to eat clean I have to make it SIMPLE.  These are recipes for the MOMs who need the convenience of boxed pre-made stuff.  Again not great but I am still trying...If anyone knows a great cookbook using everyday convenience stuff that is Clean and can make it Veg/Vegan super Fast MOM style let me know.  I am running out of ideas. HELP ME  Thanks!!

KiMs Greenling.com Veggie Review


This Week was a great week of Veggies...Fruit was okay but not in season yet is my guess.  

Just to give you a quick idea I order home delivered fresh fruit and vegetables every other week to our house. We used to have this in Illinois and they still do (email me if you want the link).  But since moving here from Illinois I was having a hard time to find some home delivery that I did not have to go pick up.  Call me CraZy but when it comes to grocery shopping I HATE it.  Biggest time suck EVER!!  In come Greenling.com and my prayers have been answered by the food god.  

I like to post what we receive and let you all know about the AMAZING goodness that comes with real fruit and veggies.  The thing that I always have to get over is the way the fruit and veggies look.  Remember they are picked and delivered...there is no coating with wax and spraying them to look pretty.  This is raw UGLY looking but soooo tasty fruits and veggies.

Gardening with KiM - OMG What Happened...

From my previous gardening with Kim post I showed you I planted a small vegetable garden.  I have been watching it like a HAWK.  Everyone is telling me do you have rabbits? Nope have not seen one since I have arrived in TeXas.  

What about the birds? Nope they don't hang out in my yard we don't have any trees. 

But no one asked me about the little tiny (tip of a pencil) green bugs that were going to start SUCKING the juice out of my pepper leaves.  Well let me tell you they did some damage...Then I am sure I helped it out by dosing my plants with dish detergent water to help kill the Buggers.


So this is what happened to my garden...  The leaves have all fallen off but thank goodness you can kind of see the new buds coming off of the sticks that were left.
Poor Poor Pepper Plants...They have to produce peppers because they are sooo expensive for a yellow/orange/red ones in the grocery store.  Its ridiculous. 
Its a Leaf grave yard.  UGH





Check out my Strawberries they are almost done.  I am so excited I should be able to cut it into 4 pieces and share with my family.  Good thing we are not living off the land we would be starving.  LOL

The other plants you can see have been growing not as fast as I want them to be...but at least I did not kill off the leaves of the other plants as much as I did with the pepper plants.

KiMs Greenling Produce Delivery Review


I just have to say that I love getting things delivered to my house by mail and this is even better.  I am a total dork and look forward to my fruit/veggie deliveries every other week.

Not pictured was the Green Bags.  We received an envelope with green bags to try out.  Which was great because I just talked about my green bags the other day here and you can see my last veggie delivery all green bagged here.  So you can imagine my excitement when I received two more bags.  LOVE these things...thanks Greenling.



Great mix of Salad Greens for us.  



Yum I love the taste of the Arugula it is so flavorful in the salads.


The think you need to remember about the home delivery is that the produce does not look all pretty and fancy like the grocery stores.  They are rough and Fresh.  The Celery needs the dirt scrubbed off the Oranges are not all shiny and pretty.  We have been using the oranges in our smoothies and juicing for fresh orange juice in the mornings.


I will be using these Sugar Snap Peas in the recipe that came along with my box this past week.  It is for Pasta with Kale, Broccoli, and Sugar Snap Peas...YUM


This Kale is HUGE and we have been using it in Salads, Stir Fry, and Smoothies this week so far. Love it being so fresh.


Broccoli is a great one for my whole family and will not last long this week.


Beets...I like beets but they are a hard sell to the family.  This is another one that I need to figure out how to use the stalks they are so pretty.  Hopefully Yummy too.


Celery we chopped up and started eating away.  Just need to figure out if we can use the greens for anything.  I hate just tossing them if I can use them in something else.  Anyone know? or have suggestions?

Well that is all for this week...Once again another wonderful delivery of fresh produce that we will eat up and know that I am helping local farmers in addition to supplying my family with good food.  YUM

KiMs CraZy Eating Tofurky Kielbasa, Swiss Chard & Red Lentils Recipe

CraZy Eating...Yes that pretty much sums up what I have been doing since the beginning of the year.  For those of you who don't know I started off eating for my blood type A which is essentially becoming a vegetarian.  I also then threw in a bit of Vegan because I gave up all Dairy including cheese, eggs and all that stuff.

Now my main reason for doing this is to become healthier.  I have been working out (BootCamp) since June of last year and nothing was happening. (weight wise)  Very Frustrating...so I tried scaling back but you know how that goes...Does not work.  I slowly was losing the battle of fitting into my Jeans/Shorts and everything in between.

Now I decided to go full force Vegetarian with No Dairy or Eggs since January.  I will sometimes have Sushi because that is hard to give up.  So call it what you will, but I have created a term I use to describe myself CVV (Clean, Vegetarian, Vegan).  On any given day I will be practicing these ways of eating.

I have to say lately I have been missing CHEESE...I LOVE the stuff, the big CHUNKS that you cut from the blocks that are (not Kraft cheeses) the gourmet cheeses with some Olives on the side.  YUM... but alas I will stay on course because one piece of cheese will just avalanche into a whole lotta TROUBLE.

Today I have fit into a pair of RERock Skinny Capris that are a size 6.  What is exciting about this is that I don't feel like a sausage in a casing.  I actually have room to breath and the fat roll is not hanging over the top as bad.  (I say this because I have yet to find a way to get rid of this stuff)  Good Times Here.

As you know I have been getting Fruits/Veggies delivered to my home that just started up here in our area.  In my first delivery I received Swiss Chard.  I have never eaten swiss chard, have seen it in the stores, it looks pretty but never cooked with it.

Here I am taking a stab at creating my own concoction using the Swiss Chard.

RECIPE


1. Bunch of swiss chard - I separated the center stalk from the leaves.  Chopped the center stalk put in bowl.  Chopped Leaves and put in another bowl















2. Onion - Chopped and put in bowl with chopped center Swiss Chard stalks.

3. Garlic - Minced

4. Olive Oil

5. Tofurky - Kielbasa

6. Red Lentils














DIRECTIONS

  • Begin by heating up olive oil.  Once hot add garlic to release the flavor.



  • Cut Kielbasa in slices how ever you like I did them at an angle. Add some olive oil and pan fry them in another pan.



  • In another pot cook the lentils according to the directions. I love the color of the red ones.





  • Once the garlic is lightly browning add the onions and the swiss chard stalks to stir fry in the pan.



  • After the onions and the swiss chard stalks become soften add the swiss chard leaves and cook till they become wilty.






  • Once they are close to getting done add salt and pepper to taste. Then add the cooked kielbasa tofurky to the pan and combine.




  • Add the Swiss Chard and Kielbasa to a plate with the lentil beans and enjoy.





I served this to my dear H and myself.  The response I received from dear H who pretty much eats everything was "this tastes very earthy."  Yes it does have a distinct flavor to it...I enjoyed it but I also added my FAVORITE Hot Sauce to it.  Needless to say Dear H did not bring the left overs to work which was find by me...I finally got to eat some of the left overs.
