Okay so I like to drink ReD wine.  After visiting the Doctor he suggested that I have a glass a few times a week.  I was thinking NO Problem...But my problem that I do have is 1. I am allergic to some red wines...not all but some more than others. 2. I usually really only like one glass but maybe on occasion can drink two.  The problem then becomes that I have a whole bottle that sits on the counter that I may or may not finish.  Wasted Wine.  Yes to those of you who are cringing right now I KNOW.  

To try and fix this problem I bought a box wine.  CRINGE yes but it is not one of the CHEEZY ones there is one by a winery called Hardy's out of Australia that has really good Boxed wine that I am not allergic to. So here in TeXas the local liquor store is called SPECKS in Illinois it was Binny's Beverage Depot.  I went to Specks hoping to get the Hardy's well much to my disappointment they only had Chardonnay which was not my cup of tea wine.  I was forced to purchase a different brand the Bota Box brand.  

FINE what ever....I am still mad at SPECKS because they don't carry my Coppola Wine. (HEllOO HEB Carries it why don't you??)

Now I can drink as much or as little as I want with out wasting it. The first night we crack open our BOX I take a small glass and its pretty good.  Finish it and about 30 minutes later my nose starts getting stuffy, my asthma is kicking in a bit and my face is itching.  UGH I wonder if there is some allergies in the air since the weather is getting warmer.  Talk to Dear H and he is having the same issues.  He says maybe its the wine.  HUMMMM I think maybe but I am willing to try it again.  Pop an allergy pill go to bed.

Fast forward to last night..I get a small glass of wine and start drinking it while I am helping my 3rd grader with his math homework.  Not before I can even finish the glass my face is on FIRE and it ITCHES like crazy.  At one point my 8 year old asks me if I am okay because my face is all red.  GREAT I am SOOOO allergic to this box of wine.  

I try and get a box so I don't waste the wine but in the end I will have to dump this one.  :(  Good thing I purchased two boxes.  UGH  I think the other one maybe a different type so I will be giving that one the old College try.  If it too does not work then I will be going back to my good ole bottles.  

Do you have this issue with Wines?  If so is there a brand that works better for you than others?  TELL ME  Please.

KimS KiTcheN CreaTioN~ Vegan Enchiladas

I think the single most complicated thing in this whole eating, Clean, Vegetarian, Vegan (CVV) thing is coming up with recipes. Yes there are a ToN of recipes out there but not many that don't involve a ToN of work or prep work. I am not interested in spending my life in the kitchen.

I have been trying to scour the Internet for easy vegan recipes to make. I found this one today and have made my own spin to it.

Vegan Enchiladas
8-9 Yellow or White Corn Tortillas
2 - 10oz. Enchilada sauce we used HOT
1- Can black beans
1 small onion diced
2 cloves of garlic minced
1 tsp cumin
1- package silken tofu

Heat oven to 350degrees. Dice onion. Drain and rinse beans. Drain tofu and dry as best as possible. Mix onion and enchilada sauce in pan to warm. While it is warming mix garlic, cumin and tofu in bowl and blend well. Take sauce off stove and spread a small layer in baking pan. Take a tortilla spread thin layer of sauce Add small scoop of beans. Top with generous scoop of tofu. Fold seam side down in pan. Repeat till all tortilla and tofu used. Pour remaining enchilada sauce on top. Put in oven and cook for 30-40 minutes till inside is hot.

Top with tofu sour cream, chopped green onions, avocado or anything else you might like.

I figured 3 of these ends up being approximately 400 calories.

I Hope you Like these as much as we did.  I think that the filling, change the spices, would be good for a lasagna.  That might be my next SilKen ToFu try.

Hi All,

No I did not fall off the face of the earth, just kinda:) I am in the process of getting my master bathroom redone and my daughter's bedroom made over into a big girl room. I will try and post some before and after pictures before too long.

My daughter wanted a big girl room because she turned eleven so she thinks she is all that and a bag of chips! We looked at some different colors and we looked on Pinterest and she liked the Tiffany box blue. We were able to color match a Tiffany box blue at the local Lowes store. They did a fantastic job! When it came time to decorate we found that the only colors that really go with Tiffany box blue is black and white.

One of the first crafts I put together for her room was a magnetic board using a yard of black and white damask fabric. It is super, super, easy!! All we did was go to Lowes, that is my home away from home now, and pick up a good sized sheet of sheet metal, spray adhesive on the metal, wait 10 minutes and then put the fabric on the sheet metal. The fabric covered sheet metal is now hanging above my daughter's desk in her room. I went to Staples and found some magnets to put on the board and viola!
On a side note, I did hang the magnetic board with 3M adhesive squares that holds up to 12 pounds. That way, my husband, did not have to put any more holes in the wall.

If you wanted to dress up the board, I could have arranged trim around the sides to make it look more like a picture. My daughter did not want that so that is why it is in its' simplest form. Either way, it makes a statement and she loves it in her room!

Sitting at home watching a few minutes of TV while I eat lunch I saw this....Wraptastic   

I though how clever...Until I realized that they give you the first one filled with their brand of wrap.  So you know the second you put in your brand you will look like the people having trouble with the saran wrap.  I have this funny feeling that it will be a total BUST.  What InfoMercials have you watched that have caught your eye?? 

Kroeger it is really CHEEZZZY that you make us customers ring a bell at the counter, while we are checking out, to show we had really good service.  I could not bring myself up to ring the bell. Take a ball and put it into a jar at the counter to show good service I could do.  Quite non attention getting or CHEEZZZY.

And to the Bagger at Kroeger today thank you for letting me know you "hope you did not fill my bags to heavy for me."  YES you filled them ridiculously heavy...I only had about 20 bags I brought for you to fill and you had a ton left over...You could have filled some of the others instead of trying to fit everything in 4 bags.  Just saying.

Why do doctors offices insist on photocopying the same sheet over and over so when you go to fill it out it is crooked and blurry. For goodness sakes make a clean copy and use that one. Very unprofessional (IMO)

I finally saw a woman, who I kid you not, looks like her DOG.  OMG that was a sight.

KiMs CraZy Eating Clean, Vegan, Vegetarian (CVV)

Okay so I promised you all my weight results.  Since beginning this current bootCamp Session is when I started eating Clean, Vegan, Vegetarian (CVV).  I had my BooTCamP instructor weigh me because I don't, nor will I ever, own a scale.  First off when she weighed me I was by far ShOCked because who really wants to see what they weigh.  NOT ME obviously.  

We stared eating CVV and I have been doing really good.  I try and watch my eating to make sure I am getting all the Iron and stuff you would normally get with meat and dairy (thank you Renee' who is very concerned about my Iron intake :P)  I told my BooTCamP instructor that at the two week mark I wanted to weigh myself to see if anything was Xeting my BoDy particularly FAT.  

You will be happy to know that I have lost 4 pounds that averages out to 2 pounds a week.  Not bad.  I don't know what I was expecting...I would have liked a 10lb drop but REALLY who does that??  I can say that I don't feel as Bloated nor do my Jeans cut the muffin as bad as they were. Would I like to have  more results...YES am I happy with what I got NO YES!!

All your Vegetarians and Vegans reading this please let me know some of your favorite blogs with good easy recipes for me to try. :)

Ok, Kim, so I did go MIA:) sort of....

Hello, Miss Kim, and to everyone else out there, I am sorry I went a little MIA lately. 

No, I wasn't on vacation or in the midst of going vegetarian, clean, vegan, or whatever you want to call it, I have just been lazy, well kind of. 

It is like this. 

When I am on a break from school, I always have these grand plans that I am going to accomplish many unfinished tasks, but in reality, it usually takes me one full week to just adjust to not having a scheduled day. Throw Christmas and New Year's in there and it is like, holy moley! I can't even handle it! 

I am a procrastinator and do my best work under pressure so having time to lolly-gag generally works against me.

What I have been doing is undergoing a bathroom remodeling process that is extremely time consuming because we are the ones providing all of the materials. Do you know how many stinkin' tiles I have looked at? Ugh!! Then there is grout color and sealer, and glass doors, and paint, and vanities, and faucets, etc..... I think you get the point! 

Another thing going on right now is work. When you haven't worked for two weeks, and then you go back, it is a shock to system! You would think the students would be tired, ugh... no??? They come back bright eyed and bushy tailed ready to learn. Imagine that! That in itself takes a lot of my energy. That whole teaching thing:) 

Then, there are my three darling children and all of their activities. It is never ending my friends. The last thing that has been keeping me MIA is exercise. No, I am not going extreme like you Kim, but I have been exercising about 5-6 times a week and trying to make wiser choices when eating. Try to find time to exercise! Sometimes it is at 5am, sometimes it is at 7 pm.

So, my dearest friend Kim, I may go MIA at times but know that I will always surface again! I love you dearly, and remember my sarcasm, is coming from the right place. :)

In Memory of Those We Lost

Sorry it has been awhile since I have posted. I can list all of the excuses I have but instead I will just leave it be.

I wanted my first post after the holiday to address the horrible shootings at the elementary school in December. Being a parent of children the age that were killed and being an educator made it even more difficult.

I feel pain in the deepest part of my soul for all of the victims and their families. Losing a child is unimaginable and to lose them at the one place you think they are safe, school. I have shed many tears and questioned 'why?' many times as I am sure many other people around the world have, too.

On Christmas Eve, my children, my husband and I decided to honor all of the victims. I went to Party City and got pink balloons for the female victims and blue balloons for the male victims. We wrote each name of the victims on a balloon and then let them go. We said, "You are all free from pain and may each one of you, adults and children, rest in peace."

I have included some of the pictures of us releasing the balloons. Even as I am typing this now, I have tears rolling down my cheeks. May we never forget these victims as we move forward with our very busy lives and be thankful everyday for the many blessings we have.

KiMs CraZy Eating Clean, Vegan, Vegetarian (CVV)

Okay so this whole eating vegetarian/vegan thing has me worried. I veered from the whole thing last night and had buttered popcorn. Ooooh that did not sit good with my stomach. This morning and during the night, according to my H, I sounded like the bridesmaids when they were trying on dresses after they ate the bad food.  Currently Butter is OFF the list of things I will eat in pure form.

What if I can never go back to eating Dairy? I guess its okay but I like to have that option. Mind you I come from the land of Meat and those of you who live in Illinois know what I am talking about.  Portillo's Beef Sandwiches, Gyros,  Chicago Style Hot Dogs, Italian Sausage & Meatballs, BBQ Ribs...etc. so after years of eating this stuff is it mental cravings or am I actually missing this.  Most of the time I chalk it up to years of repetitive eating that I have to break the cycle.  Since moving here to TeXas they don't have a Portillo's, can't find Gyros anywhere, don't have any good Hot Dog/Beef Sandwich places around and no Italian Grocery Stores in my area.  That being said I believe that helps me to make this change in my eating.

We'll see how I am still doing at the end of the 6 week boot camp eating CVV (Clean, Vegetarian, Vegan)  The reason why I say both is because I do eat fish a few times a week as in Sushi, or Tilapia.  

The two week weigh in is in a few days and, besides feeling less bloated and having more energy, I hope to have lost a few pounds. 

A few of my FAVORITE things that I have been eating on this CVV (Clean, Vegetarian, Vegan) thing I have been doing.

RICE PAPER

 

I LOVE this stuff.  I put EVERYTHING in it.  This morning for breakfast I put Cucumbers sliced, cabbage, carrots, crab meat, and Kale.  Wrapped them up and Whal AH.  YUM

I have put stir fry in here and wrapped them up.

I have put lettuce and mango, avocado salsa and wrapped them UP.It has been a life saver because as you know I had to ditch the HEB Tortillas and come up with something else that I could eat and fulfill a craving. 

Since doing this CVV I have also given up a TON of Carbs,  I will eat Very little Rice and bread is only Sprouted in the Freezer section. This Rice Paper has taken the place of my Tortilla addiction. 

Mango, Avocado Salsa

This by far has been one of my favorite toppers.  It is so easy to make but super time consuming to chop.  It too has made its way into my Rice Paper Wraps. Let me know if you want the Recipe.

Taro Root

I was need in of a CHIP to use for the Salsa.  I remembered that there were Taro Root Chips and I figured that I could make them myself.  I headed to Pinterest because everything is on there. (If you want to find out the next thing I will be making be sure to follow me on Pinterest to see the next CVV thing I will be experimenting with) Found a few posts that told me how to make them and off I went.  Again very easy to make but SUPER time consuming

Eating For Blood Type A...The SaGA Continues.

Okay so many of you that have been reading our blog know that I am always looking for a way to eat better.  A while back my bootcamp instructor said why don't you try eating for your blood type.  Well mine of course was A and that is pretty much a vegetarian.

Need less to say that only lasted a short time and I went back to some bad ways.

Starting this new year I have renewed my Eating for A but not limiting myself with any veggies.  All are fair game.  Currently I have given up dairy and meat but do eat sushi and fish 2-4 times a week and will sneak in an egg once in a while.

I have switched my FAVORITE Creamer Peppermint Mocha out for a Coconut Milk Vanilla Creamer.  It only has taken a week to get used to that but it is doing pretty good.  I have also purchased Coconut Milk Ice Cream for those days when I just want chocolate or treats.

We only eat sprouted bread and pitas for a carb fix.

For Chips I have learned how to make Taro chips from a Taro Root.  We have been eating them with different types of Fruit Salsas.  Bummer when I went to go to the store and purchase more to have on hand they were out.  Less than two weeks and the Whole Foods will be open and the Sprouts store will be opening soon.  Hope to be able to find Taro Root there to cook.

I am currently only drinking water diluted green tea or green tea.  When I am out I will just order tea or water.

I have been making some pretty interesting meals and will be posting some of them as I make them for you all to see.

It has helped that my dear H has decided to participate in this adventure of eating Vegetarian/vegan.

Today while walking around SAMs Club I was constantly pulling up my pants...Wishful thinking I am sure but you never know.  My boot camp instructor will be weighing me next week so I will let you all know what the verdict is.

HELLO RENEE' ARE YOU OUT THERE....that would work if she actually read what I posted.  Hopefully her husband will read this and kick her in the BUTT!!  :)

Seriously if you get a text from someone why does it take over a day or more for some people to respond?  REAllY I know you saw it just answer.

Just took down my Christmas Decorations outside in ShorTs and did NOT feel like I was going to get FROST bitten like last year in IL.

Hobby Lobby you might want to think about housing your die cut cartridges near the front of the store instead of some where near the loading dock. I Did not care 10 minutes later after the poor girl finally got back from china to pick them up. But the million of people that decided to check out at the exact same time were a little perturbed.

Steel Cut Oats. Now I know why they call them that. Because while you are enjoying your oatmeal all of a sudden you CRuNCh on a piece of steel which feels like you are crunching on a rock. Good times eating healthy. I guess that's what happens with you eat natural. Rocks and all.

What KiM Got for Free/Won this WeeK

Yes I have been slacking on posting but that does not mean that I have stopped receiving Free STUFF. So Here We GO...

Pedia Lax Cute sample with Coupon...Though at this point my boys do not have any problem in this department.  LOL

This one was exciting to me because I am thinking about baking some bread for the boys this year so I know what goes into it.  I am sure once I do you will read all about it.  If it works I will be using the coupon they give.

Vitamin Burst - I was very excited to get these because I have been in a drink LUL.  There are so many drinks out there and I have a hard time with all that they put in them..these will be fun to try.  I love the Keurig samples and the packaging they come in.

Love Free samples of products that you can try.  Bear Naked Nut Cluster CRUNCH. This one did not make it for very long it was eaten pretty quickly. Love the Coupon attached.

Purex Ultra Detergent Pack...I have seen the dishwasher ones but not the ones for the Washer.  Now knowing how stinky my boys are I am skeptical that there is enough detergent in this little pouch to clean their STINK.  I will be using it on a load of towels first cause I feel that there needs to be a lot more dirt fighting detergent.  LOL I would need the JUMBO pack.  Haha..The packaging that they cam in was very creative and FUN.

Tea..There are a lot of things/companies/monthly kits that give out tea.  Now I am very picky about the tea I drink and right now the flavor of the month is GREEN.  As long as its not flavored I will be trying it. This particular one came with a great Marketing Campaign based on the Election.

This is with all the fun toiletry products that I need to start using and trying.  I am excited to try some new products this year including this one.

Renee: My daughter failing math, I hired a tutor and am working on my patience when trying to deal with her myself when it comes to completing math

Kim: I have No IDeA...I will have to look this one up.

Renee: Haven't been reading much lately so I have to take a pass on that one....unless you count the US weekly reporters:)

Renee: I don't know that one either... I would consider anyone who has served in the military to protect our country a hometown hero
