KimS Eating CVV Recipe Vegetable Soup

I was not feeling well the other day. I thought how great it would be to have some of my moms chicken soup. Well since I am eating #Clean, #Vegetarian, #Vegan I naturally would need to create another type of soup to eat.

Vegetable soup it is. 

I took what I had on hand and created this recipe.

1 cup shredded cabbage
2 carrot stalks cut into small pieces
1 small onion
1 celery stalk chopped
1/2 red pepper
1 can stewed tomatoes
1 can white beans rinsed drained
1/2 cup quinoa
4 cups organic vegetable broth
2 cups water
2 tablespoons ginger chopped
3 cloves garlic minced
1 teaspoon cumin
1 teaspoon chili pepper
1/4 teaspoon pepper
1/2 teaspoon salt
1 teaspoon olive oil

Add olive oil to the pot and add onion. Sauté till soft. Add garlic ginger sauté or a few minutes. Add quinoa stir. Add other veggies and can of tomatoes with liquid and white beans. Add broth, water and spices. Summer for 45 minutes and enjoy.
