KiMs (CVV) - Green Chili Enchiladas #Vegetarian

Green Chili Enchiladas as I have promised these are the ones that made dear H and I sweat as we were eating them.  They had some wonderful flavor and heat.


2 Cans Green Enchilada Sauce
1 Can Green Chile Peppers
1 Green Pepper
1 Onion
1/2 Jalapeno
1 box Silk Tofu
1/3 cup Cilantro 
3 cloves garlic
2 Tablespoons Olive Oil
1 teaspoon cumin


Chop up the Green Pepper, Onion, Garlic, Jalapeno and saute with Olive Oil.  

While those are softening drain tofu and put in bowl mix in cumin and cilantro. 

Next Spray your pan with some non stick spray and spread a few spoonfulls of green sauce on bottom of pan

Begin layering each corn tortilla with tofu then sauted veggies.  Roll the tortilla then place seam side down in baking pan

Once you have finished with all the tortillas pour all Green Chili Sauce over them in the pan

Bake in Oven at 350 degrees for approx. 25-30 minutes.  Check to make sure they are cooked in the center and enjoy.

  1. Low fat cheese shreded is good if you are not totally Vegan.A good green chile recipe is better than Hatch's brand. However, the canned stuff is quicker!

    I will have to look into making a green chile recipe for me to use in dishes like this. If you have one I would love to try it.

    It is always quicker with the canned stuff unfortunately.
